Gluten Free & Allergen Free Expo
A few days back, I had the pleasure of attending the Gluten Free & Allergen Free Expo in Atlanta, GA. What a great time! I was looking forward to attending the expo with so many great companies and products to learn about. The Expo was April 2 and 3 at the beautiful Cobb Galleria Centre.
I had a great time at the Gluten Free & Allergen Free Expo this year. I am looking forward to attending again next year and sharing these great brands with you as the year passes. Hope to see you there!

We started the day by meeting the other bloggers in attendance. Be sure to take a look at a few of them. My good friend, Misty from Mysterious Ramblings was in attendance. She added to the large amount of fun I was already having! Always take a friend. Expos are great but so great with friends!
Entering the Expo, I was sure to take everything in. Vendors, samples, all Gluten Free products, I may have been in heaven. Samples that I could test out and I didn't have to worry about my reaction to them. At one point I did pull my hand back when I was offered a very delicious looking pasta from Marcellos. What a relief it was to be able to try the pasta and enjoy it.
A few of my favorite stops were Spinato's, ardennefarm, Enjoy Life, Glutino, and Ronzoni. Oh the cookies from ardennefarm! Delicious and soft. They sent a sample home with me, so be sure to watch for a review coming soon.

I am so excited to share this with you! On April 2-3, I get to travel to Atlanta to attend the 2016 Gluten Free & Allergy Expo! Just imagine! The biggest gluten free and allergy friendly event in the United States, and I get to be there.
To be invited to such an event is definitely a highlight for me. I live Gluten Free and cannot wait to return with awesome products to share with you. Gotron's Shrimp Scampi with Noodles

I've always been one to try new foods. When it comes to eating seafood, I have to be in the mood. Lately I've been in the mood, maybe its the salt water at the beach telling me it's time to have some shrimp, but anyway - I came up with a delicious dish I can enjoy with my family and rave about to you!
This recipe was super easy to put together. Follow the directions on the Gorton's Shrimp Scampi box. Add a little pasta and garnish with chopped tomatoes! Then kablam! A delicious dinner!

Ingredients Needed:
Gorton's Shrimp Scampi
Gluten Free Spaghetti Noodles

Best Blender Salsa over Quinoa
Whether you are Mexican or not, Cinco de Mayo is a fun day to eat your favorite Mexican dish! This year I wanted to share my favorite with you! What's more is I get to share my favorite appliance in my kitchen with you again as well.
Many a night in my home, I am making myself dinner. Making a dinner different than what the rest of the family is eating as I am Gluten Free. A quick boil of Quinoa and some of this delicious salsa make for a perfect meal for me. Light in calorie and heavy on flavor!
This salsa is so easy to make. The hardest part is getting everything at the store. After lugging around a 3 year old who wants to buy everything with bright colors and eat all the candy before the cashier can check you out is definitely the hardest part about this whole recipe! So, let's get to it!
Best Blender Salsa

Ingredients:
2 10-ounce cans whole peeled, tomatoes
1 white onion, peeled and quartered
1 jalapeno pepper, seeded
1 canned chipotle pepper in adobo
2 tablespoons adobo sauce
1 bunch cilantro, stems removed
1 lime, peeled, quartered
Salt and pepper to taste
Instructions:
Container: 72-ounce Pitcher to your Nutri Ninja Blender.
1. Place all of the ingredients into the 72-ounce Pitcher in the order listed, starting with tomatoes.
2. Turn unit ON and hold down "Auto-iQTM PULSE" until desired consistency is achieved

I love this salsa over a bed of quinoa and garnished with a few slices of avocado. Prepare the quinoa according to the directions. Drizzle a few spoons of Best Blender Salsa over the top. Add your slices of avocado to the top. I like to cut them up to have a few bits in each bite.

Happy National Frozen Food Month with Van's Foods -- I love Waffles!

My love for Van's Foods is no new thing to you if you're a frequent reader. However, if you're new here, check out a few of the links and see what delicious products I've tried in the past.
To celebrate National Frozen Foods Month, we're going to discuss Van's Foods' Frozen line!
I am a big fan of waffles. When the doctor told me to quit eating gluten, waffles were one of my big worries. Was I ever going to enjoy waffles again? Well, of course I was and I do, with the help of Van's!
I like to treat myself every now and again with blueberry waffles. Tunnel vision is present when I'm grabbing these at my local grocer. Must get blueberry Van's. Must get blueberry Van's!! I had no idea there were other flavors. With National Frozen Food Month, I opened my eyes a little wider and noticed they also carry an apple cinnamon flavor!
I picked up one of each flavor and of course I gobbled down the blueberry first. Then came the apple cinnamon. Now, you already understand how much I love waffles and Van's gluten free waffles. My expectations of all things waffle changed the moment I placed my first bite of apple cinnamon in my mouth. There was apple. There was cinnamon. There was butter. There was waffle. Oh good golly have I been missing out with this flavor!!
After I was able to move passed the absolute yumm that was the apple cinnamon Van's gluten free waffle, I talked myself out of the kitchen. My will power barely presented itself. The only thing that kept me from eating the whole box was the thought that I could also enjoy them tomorrow! Soooooo good!!!
If waffles aren't your thing, definitely give their pancakes or french toast sticks a go. An option for everyone! Happy National Frozen Food Month!

Wonderful Gluten Free Options with Van's!

The two lines of products I want to talk about today are their new pastas and granola. Both of these products were a pleasant surprise for me!
I don't typically eat a pasta that isn't mixed in with a red sauces these days, so when I was able to enjoy an old favorite.... You can just imagine how happy I was! Van's new pasta line includes three varieties - Ultimate Cheddar Penne, Rotini & Red Sauce, and Creamy Herb & Garlic. My favorite out of the two were Creamy Herb & Garlic. It is so creamy and full of flavor!
Close behind in ranking is the Ultimate Cheddar Penne! I added a little extra pizazz to my penne dish. My little addition of ranch flavored chips was perfect!
See, doesn't that look tasty? Each variety is very easy to make. Simply boil water, add pasta, drain pasta and add the sauce packet to the pasta. The Cheddar Penne and Herb & Garlic require a little bit of milk and butter.
Now I need to fill you in on the best Van's product I have ever tasted. I'm pretty sure my husband would agree as when I asked him to try it for his opinion he didn't want to give the bag back and may have muttered something close to, "You never share the good stuff!" at me. I do not feel bad for one second about not wanting to share the new Van's Granola. It is truly... The Bomb!
This granola comes in two varieties - Blueberry Walnut, that you can see above and Cranberry Almond. These granolas contain whole grains and their own special variety of nuts and fruits! My favorite is the Blueberry Walnut, but Cranberry Almond can definitely hold it's own! Again, these products are Gluten Free, people!!
A few ways you might eat Van's new Granola:
- Mixed with your favorite yogurt as a parfait.
- In a baggie on the go!
- On top of ice cream. Everything is great with ice cream, but I think this granola would be a perfect match!
I know I'm leaving out about a million other ways to eat granola, but however you eat it... Make sure it is Van's and make sure you enjoy it!

Treats and Sweets -- Diana's Bananas Review

As we are starting to warm back up, I have been spending a lot of time finding ways to indulge and cool myself down. Silly Florida weather has me craving cold treats and sweets. My family is a fan of treats and sweets all year round, so you can imagine the pure excitement that ensued when I opened the box of Diana's Bananas to share with my Littles!
At Diana’s Bananas, we do it right—making the finished product is a 14-step procedure that includes purchasing, testing, peeling, sizing, freezing and dipping—and you’ll taste the results of our hard work in every delicious bite!
Our team personally selects only fully ripe, creamy, sweet white bananas, which we quick freeze to -20 degrees Fahrenheit. The result is an easy-to-bite banana with texture so smooth, you’ll think you’re eating ice cream.
After our quick freezing process, we dip the bananas in real bar chocolate. We never use chocolate flavored coatings or other inferior substitutes. The world’s best bananas deserve real chocolate—you do, too!

As I am supposed to limit my dairy, these are a great option for me. I can indulge in my love of frozen treats while keeping an eye on the dairy factor of foods. Just a little chocolate never hurt anyone! Plus the Dark Chocolate is dairy free!
We had a small problem with the milk chocolate falling off of the banana. This didn't discourage the kids though. That just meant they could eat the chocolate by itself.
Late night brought a craving for something delicious, so I pulled out my Banana Bites! They go great with family board games, while you're doing a little work, watching TV or just simply want a small snack while you're walking by the freezer.
If you are looking for a delicous sweet treat but don't want to spend the calories or can't have too much dairy, these are for you! Bananas provide protein, so why not get a little chocolate in while you're feeding your body and your cravings?
